Eating healthy isn’t so painful when you’re a food nerd. Well, it is, because there are so many unhealthy things I could make if I wanted, but I choose to focus my food nerd energies towards making healthy stuff like this dinner I had tonight.
I’m on the eat generally good stuff, and not too much of it, diet. I make lots of stuff in big batches to combine into meals later, and also keep lots of produce in my fridge at all times.
This bowl is brown/wild rice medley with black beans that I made from scratch earlier this week and warmed back up, sauteed veggies (red pepper, onion, zucchini, portobello mushrooms), half an avocado, a couple sunny-side eggs, and finished with cilantro, green onions, and sriracha.
I bet my farts will be amazing tomorrow.

Replace the black beans with steak, and the onions with steak, and I’m all over it. I’m not even an avocado fanatic but that looks fantastic.

Looks delicious. I know rice and beans combine to form some sort of essential protein, but is a big bowl of rice, beans, avocado and eggs really all that healthy? Obviously compared to a big mac or pizza this is 1000% better, but it seems like a bunch of carbs and fat to me. If I want to eat healthy and get full I just eat a huge salad with grilled chicken.

These are rough guesses at the portions but I looked up the numbers...
2 eggs = 160 calories
1/2 avocado = 160 calories
1/2 cup brown rice = 110 calories
1/2 cup black beans = 120 calories
Maybe another 25-50 calories for the veggies and olive oil they were cooked in.
So, 600ish calories give or take, and none of the carbs here are refined.
Other than that, today I’ve eaten 2 granola bars, a banana, and a salad with a piece of salmon.
I'd say I'm doing fine.

I’d say that’s good. I used to have a coworker that would go downstairs to the cafeteria, and go to the salad bar. Then he’d bring it back and talk about how he was “eating healthy today”. His salad always had the following: iceberg lettuce, cheese, grilled chicken, bacon, hard boiled egg, ham cubes, and half a cup of thousand island. More like a bowl of cholesterol with some lettuce sprinkled in.
